Our Farm
We run a small organic farm by the site of an old saw mill at Wilton, Bree, on the banks of the river Boro and nestled under Bree Hill. It is this mill that gives the farm its name.
By 'we', we mean the family and willing helpers of sisters Sinead and Ellen Whelan. We entered organic conversion in Jan 2023 and are partnered with The Irish Organic Association.

Our Animals
We have a small herd of pedigree Belted Galloway attle.
The Galloway is an old cattle breed, native to Scotland. They are very hardy and the cows are easy calving with an abundant supply of milk. They have a thick double layer coat so can be out wintered. Thus they don't need regular dosing or antibiotics. Our cows calve outside in spring on grass and are allowed to slowly mature for at least 20 months before being presented for sale at market, which means that they produce succulent meat with excellent marbling and high in Omega 3.
Out on the fields they may look a bit like an Oreo biscuit, but at your table they will taste much better!

We have a small breeding flock of 80 lowland ewes. We lamb 2 batches, one in March and one in April, notwithstanding a few early surprises and late stragglers. Where possible the singles will lamb out on grass, with the multiples needing some closer attention.
The lambs are out to pasture as soon as ever possible and allowed to naturally thrive on mothers milk and to frolic freely, as is their wont! They will suffer minimal interference from us, as soon as they can out run the kids that is, until the are ready for your table.
